I crochet items with thread: doilies, crosses, crinoline girls, etc. and was curious how to go about selling my items (consignment or resale) to local flower and gift shops. Would it be best to build up my stock before approaching them, or would it be ok to just give them a taste of what I have to offer and what is available to them? Can anyone help me?

Consignment selling is a start. Go to the local flower shop and ask them if you can have your item displayed 'for sale', make them a good deal and see what comes of it.
A friend of mine did it with African Beads and he made some bucks that way.
